History and description of Cellini

Raised by the nurseryman Leonard Phillips of Vauxhall, London and introduced c1828. Grown around London in the 19th Century. Attractive bright red flushed fruit. Crisp, juicy flesh. Quite sharp tasting with an unusual balsamatic or aniseed flavour. Cooks to a light flavoured, cream coloured puree.
